This much loved stew takes its name from the conical earthenware vessel in which it is traditionally prepared and you find variations all over North Africa and the Middle East. Our Moroccan version is made with fruit and spice to complement tender, slow-cooked lamb. Diced French lamb is sourced from our local butcher in a mild sauce with dried raisins, apricots and almonds.
Served with couscous and a minted yoghurt dip.
